Hibernia Restaurant

Hibernia Restaurant was started in 1987 when Raoul Rodriguez and Mary Pat O'Hanlon moved to Anguilla.

Hibernia is a small, intimate and elegant restaurant, with 11 tables set in an open air West Indian house by the sea. In 2000 Mry Pat & Raoul added an art gallery as well. It specializes in contemporary Asian Art collected during their annual travels. It is open during restaurant hours or by appointment.

Raoul, who has represented Anguilla on an international level, has formal training from the Ecole Hoteliere of Strasbourg, France, and cooking schools in Laos, Thailand and Hong Kong. He creates French/Asian dishes using the freshest local seafood, high quality meats imported from the US and France and little known Asian products, discovered during their annual travels in Asia.

They have a unique selection of wine that will enhance the experience of your meal. They also have a new cellar stocked with over a 100 different wines to make your choice an enjoyable one.
